Annotation: In this scientific research work, the chemical composition of the Oknovvot variety of melon grown in Khorezm region was studied, and melon-marmalade was prepared from them. Different proportions of raw materials were used in the preparation of marmalade, four samples - S1, S2, S3, S4 were analyzed physico-chemically and bacteriologically. Also, the process of storage of marmalade products of four different recipes in warehouses for 6 months was studied, the samples were scientifically analyzed every 30 days.
